習(xí)近平為何點(diǎn)名要吃炸魚薯?xiàng)l?

炸魚薯?xiàng)l是英國工業(yè)革命的副產(chǎn)品。盡管身為海島國家,18世紀(jì)以前,非沿海地帶的英國百姓其實(shí)很難吃到新鮮的魚。但19世紀(jì)誕生的蒸汽火車改變了一切,速度讓魚的價(jià)格便宜下來;而從南歐移民而來的猶太人,也帶來了炸魚和薯?xiàng)l的做法。炸魚薯?xiàng)l成了工人階層最受歡迎的廉價(jià)美食。圖為上世紀(jì)30年代,倫敦街頭的炸魚薯?xiàng)l店。
二戰(zhàn)時(shí)期英國物資緊缺,幾乎所有食物政府都限量配給,但由于英國自產(chǎn)土豆,并能在相對安全的水域捕獲魚類,炸魚薯?xiàng)l沒有列入限制名單。二戰(zhàn)期間英國人對炸魚薯?xiàng)l的需求比戰(zhàn)前增加了30%,因此這簡直可以稱作是英國的救命菜。在二戰(zhàn)著名的諾曼底登陸日,英國士兵靠“Fish(魚)”對“Chips(薯?xiàng)l)”作為互相確認(rèn)身份的暗號——當(dāng)然這個(gè)暗號很快就被德國人破譯了。圖為1944年6月14日,諾曼底登陸后,一艘小型登陸駁船在法國海岸附近為英國士兵們提供現(xiàn)做的炸魚薯?xiàng)l。這條船被稱為“海上的炸魚薯?xiàng)l餐廳”。
英國人炸魚最愛用的是鮮嫩的鱈魚。18世紀(jì)60年代以來,英國人對鱈魚的需求越來越大。當(dāng)時(shí),歐洲的鱈魚產(chǎn)區(qū)主要集中在冰島海域。1944年冰島獨(dú)立后,連續(xù)幾次擴(kuò)大領(lǐng)海范圍以保護(hù)魚類資源。這遭到了英國的抵抗,兩國海軍為此多次發(fā)生互相炮擊的事件,并開啟了持續(xù)二十多年的爭奪戰(zhàn)。英國盟友不斷建議英國改變消費(fèi)習(xí)慣,改吃其它魚類,但英國人堅(jiān)持只愿意吃正統(tǒng)的鱈魚。直到1976年,在北約的調(diào)停下,英國才作罷。圖為上世紀(jì)50年代,英國漁民在冰島海域捕撈鱈魚。

同年的4月14日,另一名英國首相候選人、工黨領(lǐng)袖托尼·布萊爾也在一家餐館外帶炸魚薯?xiàng)l。在那一年大選中,布萊爾最終贏了梅杰。

曾經(jīng)有研究人員說,由于氣候變暖,50年來北海里的鱈魚、鰈魚等已經(jīng)日漸減少。所以,英國本地人吃魚的飲食習(xí)慣便會(huì)隨著氣候變化海洋變暖而有所調(diào)整,經(jīng)典小吃炸魚薯?xiàng)l因此可能會(huì)被類似沙丁魚等代替。2012年,查爾斯王子到訪一家炸魚薯?xiàng)l店,親自上陣學(xué)習(xí)炸魚,并呼吁:拯救炸魚薯?xiàng)l店!他警告英國必須對海洋漁業(yè)資源進(jìn)行更合理的管理,讓英國人得以繼續(xù)享受這項(xiàng)獨(dú)有的傳統(tǒng)。
炸魚薯?xiàng)l是伴隨著現(xiàn)代英國成長的食物,擁有著堅(jiān)實(shí)的民眾基礎(chǔ)。對于首腦們來說,如果貼近人們喜歡吃的東西,就貼近了大眾,或者說讓大眾認(rèn)為領(lǐng)導(dǎo)人貼近了自己。而對于出訪的領(lǐng)導(dǎo)人來說,吃一口當(dāng)?shù)匦〕,也就表達(dá)了愿意擁抱該國的意愿。
